| A couple of weeks ago was my wife's birthday. One of the gifts she got was a waffle iron. So today, I made waffles from a very simple recipe. They were very good.
2 eggs, beaten
2 cups buttermilk (or plain kefir, which is what I used)
1 Tbsp maple syrup
1 Tbsp oil
1 cup flour
1/2 tsp salt
1 tsp baking soda
1 tsp baking powder
In a large bowl, mix the eggs and buttermilk, then stir in the syrup and oil. Combine flour, salt, soda, and baking powder. Stir into the egg mixture.
If you don't have a waffle iron, you can make pancakes if you want to. |

| Blast! Well, if I ever find myself in Belgium, I'll have to get some waffles then.  Until then, I'll have to be happy with what I make here at home. Hopefully someday, I actually will come there. |
