Scarlet from Silent Hill: Homecoming. God, this was a creepy boss.

Wesker and Jill from Resident Evil 5. Not incredibly hard, but still memorable.

The Ultemecia boss fight from Final Fantasy VIII was pretty epic!

I remember the boss from Return to Castle Wolfenstein. He definitely wasn't hard at all, but very interesting ending anyway.

Oh yeah, and in Diablo II, my fights with Diablo last 3 hours with the Barbarian, yet only like 10 minutes with the Assassin. (wonder why)

Batman: Arkham Asylum - Killer Croc.....you have to use your brain to beat him because you cannot attack him.

same goes for Joker.
