Anyways, I am not 100% vegetarian, but I guess you could say my diet is like 95% vegetarian. I only eat meat once every few days it seems. I haven't had meat in about 3 days now
. I used to love beef when it was rare and bloody, but now I don't even like beef. I only want beef in the form of a Kuma's Corner burger....yum. Also, I hate pork (ew). I still eat lean meats like white turkey and chicken, fish, etc. But only like twice a week or less. I'd like to become fully veg, but at this point it's harder to (economically, without getting malnourished, etc). I also have contemplated veganism, but I don't think that's for me.
Here's an AMAZINGLY DELICIOUS recipe, and right in time for Thanksgiving season!!!
I HIGHLY RECOMMEND THIS. It came out AMAZING when I tried it. It's also very simple, easy, and fast to make. And I guess healthy enough? Plus, it's easy to make it vegan: don't include the cheese (or use vegan/soy cheese).
Garlicky Baked Butternut Squash Casserole:Ingredients:-2 tablespoons minced fresh parsley
-2 tablespoons olive oil
-2 garlic cloves, minced
-1 teaspoon salt
-1/2 teaspoon pepper
-3 1/2 pounds butternut squash, peeled and cut into 1-inch cubes
1/3 cup grated sharp yellow Cheddar cheese (or Parmesan cheese, although I recommend yellow cheddar)
Directions:In a large bowl, combine the parsley, oil, garlic, salt and pepper. Add squash and toss to coat.
Transfer to an ungreased shallow 2-qt. baking dish. Cover with cheese. Bake, uncovered, at 400 degrees F for 50-55 minutes or until squash is just tender.
